Ingredients list for the roasted sweet potatoes :

  1. 2 pounds sweet potatoes
  2. 4 tablespoons unsalted butter
  3. 1/2 teaspoon salt, plus 1/2 teaspoon freshly cracked black pepper
  4. 1/2 teaspoon cinnamon
  5. 1/2 cup maple syrup
  6. 1/2 cup chopped pecans
  7. 1 sprig of fresh thyme + for garnish (optional)

Directions :

1. To make the roasted sweet potatoes: Preheat your oven to 425ºF (220ºC) and prepare a rimmed baking sheet.

2. Peel and slice the sweet potatoes into 1-inch thick slices, and arrange them on the roasting pan.

3. Melt the butter, and drizzle it on top of the sweet potatoes. Sprinkle on the salt, pepper, and cinnamon. Toss the sweet potato rounds to coat, and then redistribute on the pan in a single layer, not touching. Transfer to the oven and roast for 20 minutes.

4. Flip the sweet potato rounds using tongs, then roast for another 20 minutes. The potatoes are done when they’re crisp and golden brown, and the insides are light and fluffy.

5. In the meantime, make the maple pecan sauce: bring the maple syrup to a boil in a small saucepan or skillet. Add the pecans and thyme. Wait for the sauce to come back to a simmer, cook for 1 minute, and then remove from heat.

6. When the roasted sweet potatoes are ready, transfer to a serving platter. Pour the maple pecan sauce over the sweet potatoes and serve. Garnish with more thyme and serve. Enjoy! ❤️

We cut the sweet potatoes in thick rounds for the presentation. But if you’re making roasted sweet potato cubes instead of slices, your roasting time is cut in half—about 20-25 minutes. The smaller you go, the less time it takes!

Do we have to peel the sweet potato first?

Sweet potato skins are edible and become crispy in the oven while roasting, just like regular potatoes. So it’s totally up to you if you’d like to keep the skin on.

How and how long to keep the roasted sweet potatoes leftovers?

These roasted sweet potatoes will keep in an airtight container for up the 3 days in the refrigerator. Reheat gently in the microwave with a few drops of water to loosen the sauce. Or, as we like to do, reheat them on the stovetop in a cast-iron skillet until hot. The maple pecan sauce can keep in the refrigerator for 3 days.
