Italian-braised sausages with beans

Ingredients :
- 8 thick beef sausages (21⁄2 pounds)
- 2 × 14-ounce cans diced tomatoes
- 7 ounces drained marinated antipasto vegetables
- 14-ounce can cannellini beans, rinsed, drained
Italian-braised sausages with beans
Instructions :
1. Cook sausages in heated oiled large saucepan until browned. Remove from pan; cut sausages in half lengthwise.
2. Add undrained tomatoes and 1⁄3 cup water to same pan; bring to a boil. Return sausages to pan with antipasto vegetables; simmer, covered, 15 minutes.
3. Add beans to pan; simmer, uncovered, about 10 minutes or until thickened slightly.
We used sun-dried tomatoes, marinated artichokes, grilled eggplant, and red peppers for the antipasto mix; however, any combination of vegetables can be used.
